Ingredients

  • 0.5 cup Coconut milk
  • 0.5 cup Almond butter or any other nut butter
  • 0.5 cup Raw cacao powder
  • 0.5 tsp Baking soda
  • 0.25 tsp Himalayan salt
  • 1 cup Pitted dates

Instructions

  1. Add the Coconut milk, cacao powder and pitted dates to your blender. My dates where frozen, so I soaked them in boiling water for a while before adding to the blender. Discard the water. Blend until completely smooth.

  2. Now add all the other ingredients; almond butter, baking soda, salt and mix well.

  3. Spoon into prepared muffin pan and bake for 10min in a heated oven at 175 deg.

  • 250 grams Shredded unsweetened coconut
  • 4 cups Hot water

Instructions

  1. Put the dry coconut in a blender and add the hot (almost boiling) water. Let it sit for at least 15 minutes to soak.

  2. Blend the mixture for a couple of minutes until smooth. There will still be bits of coconut in the mixture.

  3. Pour into your prepared nut milk bag over a bowl and squeeze out as much of the liquid as you possibly can.

  4. The left over pulp can be composted or dried and used as coconut flour.
