Although winter should be drawing to a close round-about this time of year it seems as though we’re still in for a good bout of winter chills. Fear not for we have a splendid Vegetarian Lasagna recipe to ward of the last bit of cold. So here’s how to make a Winter Warming Vegetarian Lasagna.

You’ll need these ingredients to serve 6 people

  • 2 x medium onions, chopped
  • 3 x small carrots, grated
  • 4 x big garlic cloves, chopped
  • 2 x 410g tins of whole peeled tomatoes (I used frozen tomatoes harvested from our garden)
  • 4 Tblsp Tomato paste
  • 200g Mushrooms, chopped
  • 150ml White wine
  • Cup and half water
  • Oregano and Basil to taste
  • Salt and pepper to taste
  • Olive oil or Coconut Oil for frying
  • Grated cheese for on top
  • Spinach lasagna sheets

Vegetarian Lasagna

How to make the White Sauce:

  • 3 tablespoons butter
  • 4 tablespoons stone ground flour
  • 1 cup milk
  • 1 cup water
  • Salt and pepper to taste

How we did it:

First you need to chop the onions and fry, with olive oil, in a heavy based pot. Grate the carrots and slice the mushrooms, add to the pan and fry till brown. Add half of the chopped garlic.

When everything is nice and browned, add the chopped whole peeled tomatoes, white wine and water. Simmer for about a half hour and then add the rest of the garlic, oregano and basil to taste. Let simmer for another 15 min. Then add salt and pepper to taste.

In the mean time, start with the white sauce. In a pot, melt the butter, add the flour and mix well. Ad a little of the milk and mix very well with a whisk, adding milk and water little by little until everything is in. Simmer for about 20 minutes, stirring regularly until it starts to thicken. Add salt and pepper.

NOTE: you can substitute the water with milk; I just like to minimize my dairy intake as much as possible.

In a deep pan, layer the lasagna sheets, white sauce and tomato mixture. Starting with white sauce, lasagna sheets and then tomato mixture. Carry on until everything is used, ending with white sauce. Spread a thin layer of grated cheese over.

Bake at 200 degrees for 45 min. Take out of oven and let stand for about 10min to settle.
